Elegant, full of charm with a dash of quirk thrown in for fun, Stillery at the Intercontinental Double Bay has to be one of Sydney’s premium bars. If you’re looking for sophistication and romance in your cocktails, your service and your drinking environment, Stillery is the one for you.
It used to be that grabbing a drink in your hotel bar came from necessity more than choice. Over-priced, bleak interiors and a limited selection at the bar were the call of the day.
Now, though, it’s so good to see premium hotels putting so much effort into their bars. It’s clear from the start that the Intercontinental in Sydney’s cosy harbour beach suburb of Double Bay has done just that.
The attention to detail and selection of spirits and cocktails from this bar can only come from a deep understanding of what people want.
It’s the sort of place you can imagine reclining with a beautiful martini or a superb negroni to enjoy the company of your love or with a few close friends.
I mention martinis and negronis not just because they’re obviously the best cocktails in the whole world, but also because this bar has one of the best gin selections we’ve seen in Sydney.
From the usual favourites like Tanqueray and Bombay Sapphire, they have oddities you can’t usually get here like the Tanqueray Rangpur and – our favourite American gin – 209 from San Fran.
And of course, I couldn’t call this a good gin bar without there being some of the fantastic Australian gins available.
The bar is also beautifully stocked with a range of tonic syrups, which are becoming very popular in good bars these days.
As for food, there is a bar menu with some delicious morsels to try, but incredible cocktails are the great calling of this establishment – in our humble opinion, of course!

Our top tip for romance: get there by bus or taxi if you want, but this place is right on the water, so why not get a ferry or even better a water taxi to the wharf at Double Bay for double romance!
