Day 7 of 30 Cocktails in 30 Days Challenge: the Champino
I can’t believe the first week of the challenge is over already! All these cocktails are making time really fly by. We couldn’t think of a better way to celebrate the end of the first week than with a champagne cocktail.
The champino isn’t as sweet as a lot of champagne cocktails, but it’s just as tasty and a good champagne option if – like me – you’re a big negroni fan.
How to make a Champino
Here’s what you need:
For each drink:
- Single measure Campari
- Single measure sweet vermouth
- Champagne or prosecco to top up
- Ice
- Cocktail shaker
- Champagne flute
- Twist of lemon to garnish
Here’s what you do:
- Pour the Campari and vermouth over the ice in the shaker.
- Shake well to combine.
- Strain into the champagne flute.
- Top up with champagne.
- Garnish with a thin twist of lemon.
Mrs Romance wanted less sweet vermouth in her drink – she said it made the drink too ‘vermouthy’ – so we only used a half measure in her cocktail.
