Day 6 or 30 Cocktails in 30 Days: the Tom Collins & Passion Collins

This little number is a sharp dresser and an absolute classic. Its zesty sparkle is perfect for those hot summer’s days or a gear-change from the run-of-the-mill spirit and mixer drinks.

The origins of the Tom Collins dates back to a hoax in the USA in the 1870s. Pranksters would ask their victim if they’d seen Tom Collins because he had been talking about them.

The ‘mark’ of the practical joke would run off looking for this fellow to give him a piece of their mind. They would never find the man as he never existed.

The hoax became a nation-wide hit and even caused the papers to run alleged sightings of the mysterious rude Mr Collins.

The funny thing is if I’d seen a Tom Collins on a cocktail list before today, I’d have ignored it. Don’t know why. It just sounds… boring.

Mrs Romance put me straight on that when I mentioned it to her and once we’d researched it and made it, I’d changed my mind. Following it up with the Passion Collins, I now know they’re great alternatives to the G&T summer staple or much more expensive fruity cocktails.

How to make a Tom Collins

Here’s what you need:

For each drink

  • Double measure gin
  • Double measure of lemon juice
  • Single measure of sugar syrup
  • Soda water to top up
  • Ice
  • Straight glass, jigger measure
  • Thin slice of lemon to garnish

Here’s what you do:

  1. Pour gin over ice in the glass
  2. Add lemon juice, then sugar syrup
  3. Top up the rest of the glass with soda water
  4. Garnish the drink with a slice of lemon or lime on the rim of the glass and a couple of straws.

How to make the Passion Collins

Here’s what you need:

For each drink

  • Double measure vodka
  • Pulp of a passionfruit or a double measure of passionfruit pulp from a tin
  • Single measure of lemon juice
  • Soda water to top up
  • Ice
  • Straight glass, jigger measure
  • Lemon slice to garnish

Here’s what you do:

  1. Pour the vodka and lemon juice over ice in the glass
  2. Cut the passionfruit and loosen the flesh with a spoon
  3. Scoop the passionfruit – seeds, flesh and juice – into the glass (or simply measure out some pulp from the can)
  4. Mix the contents well
  5. Top up with soda water and gently stir
  6. Garnish the drink with the slice of lemon and a couple of straws.

There are lots of other types of Collins drinks. These are usually the same as the passionfruit recipe here with different fruit and fruit liqueurs to make the taste.
