There are cheesecake recipes and there are cheesecake recipes. This is definitely both! Opulent creamy cheesy filling with a buttery base of black forest Tim Tam biscuit and the secret to our friend Clare’s success.
Mrs Romance is known for not liking cake that’s made of cake. It sounds a bit screwy until you realise what she means. Cheesecake, pavlova, chocolate mousse cake are all cakes not made of cake, and they’re all within the remit.
So when our friend Clare announced she was going through a cheesecake-making phase, Mrs Romance’s interested peaked like the perfect meringue.
Clare was kind enough to share with us the secret to the success of her cheesecakes as she combined the special edition Tim Tams we’d brought her from Australia into her special cheesecake recipe.
If you can’t get Tim Tams, you can try all kinds of other chocolate biscuit to mix into the base. The Black Forest Tim Tams give the base a delicious cherry flavour though, with little bits of chewiness that break up the crunch of the biscuit.
Ultimate TimTam-tastic cheesecake recipe
Base
What you need & what to do:
– 300g approx biscuits – digestives and Tim Tams (Clare used the Messina collaboration Black Forest Edition we’d brought her)
– 120g butter – melted
– 25cm springform tin
1. Mix biscuits and Tim Tams together and smash them into crumbs.
2. Combine melted butter into the biscuit crumbs and press the mixture into the bottom of the springform tin.
3. Refrigerate to set.
Filling
What you need & what to do:
– 300 ml Double cream
– 500g Cream cheese
– 80g icing sugar
– 70g white chocolate – melted
– 1 tsp vanilla extract
1. Whip the double cream until it’s thick.
2. Beat the sugar into the cream cheese.
3. Melt 50g of white choc and mix into cream cheese along with the vanilla.
4. Mix it all together and pour onto the base and spread evenly.
5. Refrigerate to set.
6. Decorate how you like – Clare used a dusting of chocolate and drizzle of melted white chocolate.
