This cocktail’s awesome for the festive season. It’s low effort, high impact, and light and refreshing for a hot Aussie Chrimbo. Alternatively it’s bright and fun enough to distract you from a chilly northern hemisphere Christmas.
For some reason Christmas can be an incredibly busy holiday. Even though your only obligation is to sit around and eat, open a few presents then watch some scintillatingly bad TV, you always feel a bit rushed.
And there’s nothing worse than having a million things to do, and then have to make a round of drinks for people coming over.
This cocktail’s great for that – or if you’re looking for something to give everyone to clink at the start of Christmas lunch. It’s really quick and simple but will keep everyone entertained.
The Pomegranate Fizz
Here’s what you need:
- 1 pomegranate
- 1 bottle of prosecco (or more of course!)
Here’s what you do:
- Cut the pomegranate in half and remove the juicy seeds.
- Put 1 – 2 teaspoons of pomegranate seeds in each champagne glass then fill the glass with the prosecco.
The bubbles from the prosecco cling to the pomegranate seeds and gradually make them float. Once the seeds hit the surface, the bubbles burst and down they go again.
We love how this looks in the glass, and the dry flavour of the pomegranate balances nicely with the sweetness of the sparkling wine.
We’ve found that the effect of the bubbles is better after the bottle of prosecco has been open for a bit. Straight after opening, the bubbles are too active and all the pomegranate seeds just sit on the surface.
You can even make these ahead of time and keep them in the fridge for about half an hour. By then the bubbles will have died down enough for the seeds to start their show!
TOP TIP: Easy way to get pomegranate seeds out.
- Fill a bowl with water then pulling the fruit apart. Doing this under water keeps your hands from getting stained by the red pomegranate juice and keeps everything in one place.
- The seeds sink and the pith floats. Then just strain the seeds out and store them in a jar.
The other great thing about this drink is designated drivers, ladies baking buns, teetotalers and kids* can join in the fun too. Just substitute the prosecco with soda water or lemonade.
*Probably not suitable for young children as the pomegranate seeds could be a choking hazard.
