Hey Sammie! Love the idea of covering the platter with leaves first. I think that’s definitely the next step in advanced plattering skills! I’ve seen others use rocket actually. I remember when rocket was the in thing and everywhere served it with everything. Now it’s demoted to being nothing more than a bulk and display prop! Totally with you on the pesto front – in fact we had some dips that we were going to put with this platter but just forgot. They’re still in the fridge!
