I’ve run out of port but thanks to our firm negroni addiction, there’s plenty of rosso vermouth in the house! Great idea with the banh mi too – this would be perfect in it. Good luck with the mayo! It was very forgiving to some adaptions based on what I had in the pantry. Tastes so much like chicken pâté. I used dairy Gorgonzola, golden shallots rather than a spring onions, and red vermouth rather than port. Going to make vegan banh mi with it. Just have to make the silken tofu “mayonnaise” now!
