5 ingredient gluten-free peanut butter choc chip cookies

Mr Romance will do just about anything for these cookies: only 5 ingredients; the whole recipe takes less than 20 minutes to prepare and cook; they’re even gluten-free.

I owe my love of food to my Italian father, but my love of being out of the kitchen to my intrepid mother.

So while I love to eat, I don’t really care to cook.

I do love making desserts though. My chocolate mousse recipe is always a dinner party hit, especially as you can make it in advance.

However, one of the reasons Jim is Mr Romance is because of his skills in the kitchen. He does most of the proper cooking in our house, and I venture into the kitchen to make occasional quick and easy meals.

For a sweet treat, these peanut cookies are delicious. Since the first time he saw the Cookie Monster on Sesame Street shovel biccies into his furry face, Mr Romance has lusted after all things twice-baked.

These gluten-free peanut butter choc chip cookies are my kind of recipe. What’s more, they’re Mr R’s favourite and when he asked me to make him some last week, who was I to say no?

I generously let him eat half of them too! 😉

5-Ingredient peanut butter choc chip cookies

Makes about 30 cookies – takes about 20mins

Here’s what you need:

  • 1 375g jar peanut butter
  • 1/3 cup brown sugar
  • 1 cup choc chips
  • 1 egg
  • 1 teaspoon bicarbonate of soda

Here’s what you do:

  1. Preheat your oven to 200°C (180°C fan forced oven) and line a baking tray with oven paper.
  2. Mix the peanut butter, sugar, bicarb and egg together in a bowl. Then stir in the choc chips.
  3. Roll up teaspoon size amounts into balls and place them on your baking tray about 3cm apart.
  4. Press down on each ball with a fork to gently flatten them and give them a bit of a pattern.
  5. Bake for 8-10 minutes or until just golden.

**Don’t try and eat the cookies straight from the oven as they crumble. Let them cool and enjoy their delicious peanut butter fudgy centres.

To vary this recipe, you could try adding other nut butters like the almond or cashew butter. If you use a smooth nut butter, add in some extra chopped nuts as that really makes the texture of these crumbly cookies.

These cookies keep for a week or so in an airtight container. But I doubt they’ll be around that long anyway.

Just remember to take a photo first because these gluten-free peanut butter choc chip cookies are totally Instagram-worthy!
