Day 23 of our 30 Cocktails in 30 Days Challenge: the White Lady
When I suggested this drink to Mrs Romance, she said it sounded like a cross between a fridge and a funeral home. I can see where she was going with that. We decided to make it anyway and were pleased with the results.
The White lady is a strong drink and is quite sharp and dry. It’s not a session cocktail – more of an aperativo, but is refreshing and looks nice too.
The egg white gives the drink a kind of perma-head that will last throughout the drink and will probably still be left at the end. It also gives the drink a silky texture that we liked as well.
How to make a White Lady
Here’s what you need:
For each drink
- 1 ½ measures of gin
- ¾ measure of Cointreau
- ¼ measure of sugar syrup
- Single measure of lemon juice
- 1 egg white
- Martini glass
- Jigger measure, cocktail shaker
- Star fruit and cocktail stick to garnish
Here’s what you do:
- Pour the gin, Cointreau, sugar syrup, lemon juice and egg white over ice into the cocktail shaker.
- Shake hard for 30 seconds.
- Pour out into the glass.
- Cut three slices out of the star fruit and skewer them onto the cocktail stick.
- Garnish the drink.
We tried adding the gin after shaking the other ingredients as shaking gin is said to bruise it and ruin its flavour. We found that stirring the gin in only reduced the froth on top of the drink and not really worth it. Just shake it all together. It’s easier.
