Mr Romance will do just about anything for these cookies: only 5 ingredients; the whole recipe takes less than 20 minutes to prepare and cook; they’re even gluten-free.

So while I love to eat, I don’t really care to cook.

I do love making desserts though. My chocolate mousse recipe is always a dinner party hit, especially as you can make it in advance.

However, one of the reasons Jim is Mr Romance is because of his skills in the kitchen. He does most of the proper cooking in our house, and I venture into the kitchen to make occasional quick and easy meals.

These gluten-free peanut butter choc chip cookies are my kind of recipe. What’s more, they’re Mr R’s favourite and when he asked me to make him some last week, who was I to say no?

I generously let him eat half of them too! ;-)

Simple and quick to make, these ridiculously delicious, crumbly, chocolaty, peanutty, delicious gluten-free cookies are delicious… did I also mention that they’re really delicious?!

Serves: Makes 30 cookies
Ingredients
  • 1 375g jar peanut butter
  • ⅓ cup brown sugar
  • 1 cup choc chips
  • 1 egg
  • 1 teaspoon bicarbonate of soda
Instructions
  1. Preheat your oven to 200 deg C (180 deg C fan forced oven).
  2. Line a baking tray with oven paper.
  3. Mix the peanut butter, sugar, bicarb and egg together in a bowl. Then stir in the choc chips.
  4. Roll up teaspoon size amounts into balls and place them on your baking tray about 3cm apart.
  5. Press down on each ball with a fork to gently flatten them and give them a bit of a pattern.
  6. Bake for 8-10 minutes or until just golden.
  7. Don’t try and eat the cookies straight from the oven as they crumble. Let them cool and enjoy their delicious peanut butter fudgy centres.

If you use a smooth nut butter, add in some extra chopped nuts as that really makes the texture of these crumbly cookies.

These cookies keep for a week or so in an airtight container. But I doubt they’ll be around that long anyway.
